Day 140 of 365...

I'm nearing the half way mark for my 365 day challenge to eat something green every day. I'm actually falling in LOVE with vegetables! There have been nights when I have had a hard time deciding between which green to prepare with dinner. This past week, we enjoyed a zuchinni crust pizza and my hubs and I loved it!

I have been missing out! For 27 years, I didn't care for the stuff. If I could turn something I disliked so much into something I crave what else am I capable of? Maybe I should start a 365 day of reading challenge... anyone?

Zucchini Pasta

I bought this radical little kitchen gadget that shreds veggies into spiral shapes so I can easily replace zuchinni or carrots for pasta. Its simple to use and much easier (and quicker!) than using my mandolin. Top with sauce of your choice and if you're feeling devilish add a little cheese on top. You're cutting a ton of calories and carbs so a little cheese is OK in my book!




Quinoa

I've rediscovered quinoa and how great it goes with just about everything. I'll satueed spinach, zucchini, green peppers, jalepenos, broccoli, ANYTHING and toss it a bowl with a serving of quinoa.

friendship...


I had the honor of hosting my best friend in Houston for over a week last month. What was only going to be a three night stay turned into an eight night one. I'm so thankful for her new job that had a later start date than anticipated.

We squeezed the most out of her trip and it still didn't feel like enough. When you love your best friend as much as I love mine there never seems to be enough time in a day.

I'm full of gratitude for her and her enviable traits. She takes incredible care of the people in her life, never stopping to think of her own needs. She makes me laugh. She makes me cry. She has literally made me pee my pants. She's thoughtful. She doesn't judge me. She's drop dead gorgeous. When we are together we feel and we act ten years younger. We reminisce and reflect on our past. Why must we live a thousand miles apart?

::sigh::

We were totally spoiled by the time we had together and that is what made it so hard to say goodbye at the airport. We've exchanged at least twenty text messages with sad face emojis since complaining about the distance separating us. Despite living in different time zones, we've remained close. After all, we have been official since 2000.

Friendship is an essential part of well-being. We form relationships with the right people so that we have someone to laugh with in good times, and cry with in the bad. Friends are family that we are lucky enough to choose. I have chosen some pretty rad people and they have chosen me!
